The grapes destined for Saroto Tinto underwent a meticulous process, beginning with hand-harvesting and traditional foot-treading in a stone lagar. Subsequently, the freshly pressed juice was transferred to seasoned French and Austrian oak barrels. The maturation process occurred over a span of 7 months, during which the wine fermented naturally with indigenous yeast, eschewing temperature control (embracing wild fermentation). Both alcoholic and malolactic fermentations reached completion during this period. It's worth noting that this red wine is intentionally unfined and unfiltered, and over time, a sediment may develop. The grapes come from two old vineyards with 70 to 90 years old at an altitude of 650 to 700 metres in Peredo de Bemposta, with traditional Goblet vineyard management, with soils of decomposed granite, quartz and clay.
