This wine has left the cellar. We source it, or a comparable wine, on request.
The grapes are harvested by hand in the morning to ensure maximum freshness and quality. When they arrive at the winery, they undergo rigorous selection, gentle pressing and spontaneous fermentation in used and new French oak barrels of 500 litres and 225 litres respectively. After fermentation, the wine is aged for 10 months on the fine lees without battonage.
