Les Dômes' comes from the Les chemins de l'Arkose estate in the Loire Valley, in the Côtes d'Auvergne appellation. The winemakers, Yvan Bernard and Audrey Baldassin, use organic and biodynamic methods to cultivate their 40-year-old vines on volcanic and ashy soils. The wine is a blend of 95% Gamay and 5% Pinot Noir. The grapes are harvested by hand, destemmed and macerated for 8 days with indigenous yeasts. After a slight pumping over, the pressed wine is blended with the cuvée.
