This wine is made from whole grapes which are crushed by foot to start the fermentation process. Alcoholic fermentation takes place in 1,000-litre vats at controlled temperatures between 22º and 24º, followed by malolactic fermentation in stainless steel. The wine is then aged for six months in used 225-litre French oak barrels.
The result is a wine with a delicate and open colour that belies its elegant yet present structure and complexity. It has aromas of plum, blackberry and cherry, with hints of pepper and damp earth. The palate is incredibly delicate and elegant, with excellent balance and persistence of flavours, culminating in a long, fresh finish.
Best served between 12 and 14ºC. It is worth noting that only 600 bottles of this exquisite wine have been produced, making it a rare find.
