The Theophile range is the ultimate expression of the skill and professionalism of the Gonet-Medeville winemakers. The low yields maintained in the Ambonnay and Le Mesnil-sur-Oger terroirs have allowed a wine of astonishing expressiveness to be obtained from a blend of two grape varieties: Pinot Noir and Chardonnay. Fermentation takes place in used barrels for 7 months. Malolactic fermentation is not allowed in order to emphasise the purity of the expression of the varietal aromas. After disgorging, the champagne remains in the cellars for at least 12 months. In total, around 3,000 bottles of Cuvée Theophile are produced each year.
